Cooking with Tinkles:cornbread/ pane di mais

Hi fairies,
Today we’re in my kitchen for another simple yet delicious recipe! I’ve got a cornbread lover in my family and , to be honest with you, before meeting him I have never baked cornbread in my life ! I want to make him happy though, and I like cornbread too, so we tried several recipes till we found our favorite one, which is this one! We often bake it now, it takes not more than half an hour, and we love having fresh cornbread on hand, especially now that it’s cold outside!

Here’s what you’ll need:

2 dl (200 g) corn flour

2 dl (200 g) flour

Two spoons of sugar

0.5 teaspoon of salt

Two teaspoons baking powder

2dl (200 g) milk or water

2 eggs or 100 g butter

In the oven for 25 mins 200 °

Mix your dry ingredients, corn flour, flour, sugar, salt and baking powder in a bowl and set it aside. In another bowl mix eggs and milk (or water) with a whisk till they’re well combined, and pour the liquid mixture into your dry ingredients, mixing them till there aren’t any clumps; you can use a whisk, a wooden spoon or a mixer, it’s up to you. If you use butter instead of eggs be sure it’s at room temperature, and then mix it with  milk using a mixer till it’s fluffy .

You can shape your cornbread the way you like, we made small buns because we like them more , but you can make a loaf if you prefer, or a braid, it’s just a matter of personal preference. It will be crispy outside and soft and buttery on the inside, you will love it!

Ciao fatine,
Oggi siamo nella mia cucina per un’altra ricetta semplice ma buonissima! C’è un amante del pane di mais nella mia famiglia e , se devo dire la verità, prima di conoscerlo non mi ero mai cimentata nella preparazione di questo pane! Siccome voglio farlo felice, e anche a me piace molto il pane di mais, abbiamo provato tante ricette, fino a che abbiamo trovato la nostra preferita, che è proprio quella che vi propongo oggi! Ormai lo prepariamo spesso, ci si impiega circa mezz’ora e ci piace avere pane di mais fresco a disposizione, specialmente quando fuori fa freddo!

Ecco quello che vi serve:

2 dl (200 g) farina di mais

2 dl (200 g) farina 00

Due cucchiai di zucchero

0.5 cucchiaino di sale

Due cucchiaini di bicarbonato o lievito per pizza

2dl (200 g) acqua o latte

2 uova o 100 g di burro

Nel forno a 200 ° per 25 minuti

Mescolate gli ingredienti secchi, la farina di mais, la farina,zucchero , sale e bicarbonato in una ciotola e mettetela da parte. In un’altra ciotola mescolate le uova e il latte (o l’acqua)con una frusta fino ad ottenere un composto omogeneo,ed unitelo agli ingredienti secchi, mescolando fino ad eliminare eventuali grumi; potete usare la frusta, un cucchiaio di legno o un mixer, come preferite. Se usate il burro invece delle uova assicuratevi che sia a temperatura ambiente, e usate il mixer per amalgamarlo alle uova, fino ad ottenere un composto soffice e arioso.

Potete dare al pane di mais la forma che più vi piace, noi preferiamo i panini, ma nulla vi vieta di fare delle trecce o dei filoncini, è solo una questione di gusti personali. Il pane è croccante all’esterno ma rimane soffice all’interno, sono sicura che ve ne innamorerete!
